Quick, healthy and doesn’t cost much, the jacket potato is always a crowd-pleaser. This recipe guarantees fluffy potato in gorgeous, textured skins which are easily devoured with some drizzling butter or topped with whatever you fancy.
Drizzle of extra virgin olive oil
Freshly ground black pepper
Preheat your oven to 200.
Pierce your potatoes and microwave for between 8-10 minutes depending on size.
On a baking tray, drizzle the oil and grind the salt & pepper into the oil.
When potatoes are done, remove from microwave and toss in the seasoned oil.
Roast in the oven for 20 minutes.
Serve immediately with a good slice of butter.
