The Healthiest 3-Ingredient Chocolate Pudding

Ticking all the boxes, this is quick to prepare, filling and low on ingredients (and it pretty much multiplies your chocolate intake without costing you the calories!!)  We used quinoa & bulgar wheat mix from Tesco but you could use any grain and adjust the calories accordingly.

 

You’ll need:
50g Quinoa & Bulgar Wheat (42cals)
20g Dark Chocolate (96 cals)
100ml Rice Milk (47 cals)
~ Please use your preferred milk, dairy or non-dairy

In a non-stick frying pan, cover the quinoa & bulgar wheat with boiling water and add the rice milk.  Bring to the boil and leave until it’s cooked and fluffy. If there’s liquid left in the pan, remove from heat and keep covered for 5-10 minutes so it can absorb.

Pour 1 inch of boiling water in a cup and add the chocolate, mix until melted.  

Stir the chocolate through the quinoa (add boiling water if needed), transfer to a glass or bowl and chill in the fridge.

 

 

Optional:
For the topping:
Cashew Nuts - 20g - 115cals
Dark Chocolate - 10g - 48cals

 

Chop the cashews.

Pour 1 inch of boiling water in a cup and add the chocolate, mix until melted.  

Stir through the nuts and add to the pudding.  Chill in fridge.

Serve on it's own or enjoy after a protein packed salad!
